About This Event

This class offers the authentic experience of crafting one of the most sought-after foods in Mexican cuisine -- tamales! A hallmark of the holiday season, tamales from the Yucatan are a special treat with a balance of bright and earthy flavors. Chef Luis Realpozo will share the culinary lineage of masa and nixtamal, then lead you to prepare dough and add fillings. Along the way, you'll talk about traditional Yucatecan cooking methods and salsa preparation.

About the Instructor: A native of Mexico’s Yucatan region, Chef Luis began his career as an unpaid apprentice at an Italian restaurant. He helped open the longstanding Taco Jane’s restaurant in San Anselmo and has  appeared at  Fresh Starts Chef Events to present events featuring chocolate, an ancient ingredient in Mexican cuisine.
