Every region of Mexico lays claim to its own celebrated mole — a rich, complex, culture-defining sauce that tells the story of its land and people. Crafted from 30 to 50 carefully chosen ingredients, each recipe is a tribute to the chiles, spices, and local treasures unique to that region and pueblo. Layers of herbs, raisins, plantains, nuts, and the occasional touch of chocolate make every variation a discovery.
Demystify the process with Chef Luis Realpozo as he guides you through making three distinct moles using traditional ingredients and authentic techniques. Enjoy tasting enchiladas with mole sauce together and gain a whole new appreciation for one of Mexico's enduring culinary treasures.
What You’ll Make and Take Home:
- Prepare and taste classic Mole Poblano, Mole Verde and (tablecloth-staining) Manchamanteles.
- Take home a jar of Chef Luis’ signature mole.
About the instructor: Chef Luis hails from the Yucatán and has been cooking and teaching at Homeward Bound for over 20 years. Known for his approachable teaching style and deep culinary knowledge, he brings warmth, precision, and a passion for fresh, flavorful food to every class.
