Why are you passionate about the Ada Jenkins Center? 

This organization is very near to my heart as I have been on many mission trips providing the same generosity to communities in need around the country. I think it is amazing how ADA Jenkins is here for North Carolinians, especially because of the current state the world is in due to COVID. You can never forsee the future, so it is amazing that locals have someone to rely on when times are rough. I hope to see this operation continuing to flourish in the future.

Irish Cream Semifreddo with Guinness Chocolate Cake

Semifreddo is a semi-frozen dessert.

Guinness Chocolate Cake:

3/4 cup (12 oz.) Guinness 

1/2 stick Butter (unsalted)

1/4 cup + 1/8 cup Cocoa Powder

1 cup Brown Sugar

1/4 cup + 1/8 cup Sour Cream

1 each Whole Eggs

1/2 tsp. Vanilla Extract

1 cup All Purpose Flour

1 tsp. Baking Soda

Directions:

1. Preheat oven to 350°F, and grease a 9" x 13" pan. 

1. Sift and mix together flour, baking soda, and set aside.

2. Whisk together eggs, sour cream, vanilla and set aside.

3. In a pot, melt butter and beer over medium heat.

4. Whisk in cocoa powder and brown sugar til dissolved. Take pot off heat. 

5. Whisk in flour mixture til combined.

6. Whisk in egg mixture til combined.

7. Pour up batter into greased pan and bake for 12-15 minutes, or until a toothpick comes out clean.

*Set aside cake to cool for later use.

 

Irish Cream Semifreddo:

24 oz. (3 packages) Cream Cheese (room temperature) 

1 1/2 cup Powdered Sugar (sifted)

3/4 tsp. Vanilla Extract

1/2 cup Irish Cream

3/4 cup Heavy Cream

Directions:

1. In a mixer with a paddle attachment, beat cream cheese and powdered sugar til smooth and creamy.

2. Add in Irish Cream, heavy cream, vanilla and beat til smooth.

*Set aside for assembly

 

Assembly:

1. Using a cookie cuter, cut the cake the size of a mason jar or rocks glass.

2. Place the cake at the bottom of the glass.

3. Pour semifreddo mixture into glass over the top of the cake.

4. Place jars in freezer for 30 minutes so the semifreddo can set up, or leave in freezer until ready to eat.

5. Enjoy :)
